Raspberry Mascarpone Sandwiches
Raspberry ice cream
Mascarpone cheese
Pizzel cookie
Soften ice cream. Blend mascarpone cheese into softened ice cream using mixer. Prior to blending cheese and ice cream, put metal mixing bowl and paddle attachment into freezer for 1 hour.
Once ice cream and cheese are blended, scoop ice cream on to cookie and top with a second cookie to make a sandwich. Place sandwiches into freezer until ready to serve.
Maple Bacon Rice Krispie Treats
Serves 8-10 Recipe By: Chef Joshua N. Short
3 tablespoons unsalted butter
10 ounces marshmallows
1/2 cup of pure maple syrup
6 cups Rice Krispies
6 ounces your favorite bacon brushed lightly with 1 tablespoon maple syrup and then cooked until crisp, drained and crumbled
Melt butter and marshmallows. Stir, while melting, until it is a consistent texture. Mix in Rice Krispies and candied bacon until well coated.
Add the mixture to a 9 by 9 square pan or 8″ Springform pan that you have rubbed bacon grease on. Press down the mixture with some wax paper or wet hands until flat.
Chill for at least 30 minutes before cutting into bars.
Put your favorite ice cream between two bars to make an awesome ice cream sandwich!
