Pacos Tacos quickly became a downtown York staple for lunch in its Taste Test pop-up location and is now delivering the goods from a food truck called Vampire Taco. Word on the street is the Beets and the Sweet is where it’s at with roasted beets, sweet potatoes, pickled red onions, salsa arbol, and avocado puree. All of their vehicles for taco tastiness are handmade tortillas, ’nuff said.
