HONEY THYME PEACH TARTS
A great quick recipe to wow your guests with! These tarts look beautiful and take less than 10 minutes to get in the oven.
1 17-18 oz package puff pastry (2 sheets)
3 peaches
1 15 oz container ricotta
1 egg
½-1 Tbsp fresh chopped thyme (based on preference)
Salt and fresh cracked black pepper to taste
2 Tbsp olive oil
3-4 Tbsp honey
Optional Garnishes: Fresh ground black pepper, hot honey, fresh thyme
Instructions
1. Preheat oven to 400 F.
2. Unfold puffed pastry and roll out until smooth.
3. Cut each sheet into six even rectangles, 12 total. Divide on two large baking sheets.
4. In a bowl, whisk together ricotta, egg, zest and juice of lemon, thyme, salt and pepper. Spoon and spread evenly on top of 12 pastries.
5. Thinly slice peaches and divide among pastries. Drizzle tops with olive oil and honey.
6. Bake for 20-25 minutes, until puff pastry is golden brown.
7. Remove from oven and allow to cool for 10 minutes before serving.
8. Top with your choice of garnishes.
Tip
• Replace thyme with rosemary or sage for different flavor profiles!
PEACH COBBLER WAFFLES
Looking to step up your breakfast game? Look no further than these peach cobbler waffles!
Waffles
2 cups boxed waffle mix
1 cup cold water
½ cup canned peach syrup
1 egg
½ tsp vanilla
½ tsp cinnamon
2 Tbsp vegetable oil
29 oz can peach halves
Topping
1 cup all-purpose flour
1 cup brown sugar
6 Tbsp melted butter
3 Tbsp canned peach syrup
½ cup oats
½ cup chopped pecans (optional)
½ tsp vanilla
Optional Garnishes: Whipped cream, fresh mint, syrup or honey
Instructions
1. Preheat oven to 400 F.
2. Mix all topping ingredients together and evenly spread on a baking sheet.
3. Bake for about 10-15 minutes, until golden brown, making sure to stir crumble topping halfway through.
4. While topping is baking, mix together all the waffle ingredients except the peach halves. Stir until smooth.
5. Spoon onto a waffle iron and cook according to your iron instructions. This will make four large waffles or eight smaller waffles.
6. To assemble, slice peach halves and place on top of waffles.
7. Sprinkle with crumble topping and then drizzle with syrup or honey.
8. Top with garnishes. Serve and enjoy immediately!
Tip
• If you don’t have a waffle iron or are looking for something easier, you can use frozen waffles!
CARDAMOM PEACH PIE
Plain old peach pie is boring. Try this spiced peach pie for something different!
8 peeled and chopped peaches
Juice and zest of half a lemon
½ tsp cinnamon
¼ tsp ground ginger (or 1 tsp fresh)
1/8 tsp ground cardamom
2 tsp minute tapioca
¼ cup white granulated sugar
1/3 cup brown sugar
½ tsp vanilla Pinch of salt
1 package premade rolled pie crust (2 pack)
Egg wash for pie crust (optional)
Instructions
1. Preheat oven to 375 F.
2. Peel and chop peaches and place in a large bowl. Mix together all ingredients except pie crusts.
3. Spray deep-dish pie pan with nonstick spray. Roll out one pie crust and mold to pie pan.
4. Pour peach mixture into pie.
5. Roll out second pie crust and cut into even strips. Create pie lattice on top.
6. Crimp pie edges so everything stays together. If you want a golden top, brush pie crust with egg wash.
7. Place in oven and bake for 45-55 minutes, until pie crust is golden brown and peach filling is bubbling.
8. Remove from oven and allow to cool completely before cutting and serving.
Tip
• If you don’t like tapioca, you can replace it with 2 Tbsp cornstarch to help avoid watery pies!
