Apricot Oatmeal Cookies
Yields 5-6 dozen.
Ingredients
¾ pound margarine
1.13 pounds brown sugar
¾ cup granulated sugar
2 eggs
1 ½ cups flour
1 tablespoon water
1 ½ teaspoons baking soda
1 teaspoon almond extract
3 ¾ cup quick oats
1 ½ cups apricots
¾ cup sliced almonds
Instructions
- Cream Margarine and sugars together. Beat in eggs, almond extract and water. Add flour and baking soda. Finally, add quick oats, apricots and almonds, being careful not to over mix.
- Chill dough for an hour, or overnight.
- On a parchment lined cookie sheet, scoop about a tablespoon of dough 1 dozen to a tray.
- Bake at 375 degrees for 12-14 minutes or until golden brown.
Sand Tarts
The yield is unknown, dependent on size of cookie cutters.
Ingredients
.38 pound butter
¾ pound granulated sugar
2 eggs
2 tablespoons milk
1 teaspoon baking soda
1 teaspoon cream of tartar
3 cups flour
Instructions
- Cream butter and sugar together. Add eggs one at a time, then add milk. Mix baking soda, cream of tartar and flour together before adding to liquid mixture.
- Roll dough out to 1/8-1/4-inch thick. Use cookie cutters to cut into your favorite shapes. Sprinkle with sanding sugar and/or jimmies.
- Bake at 350 degrees for 8-10 minutes.
Thumbprint Cookies
Yields 4 dozen.
Ingredients
½ pound butter
2 egg yolks
½ cup sugar
2 cups flour
Jelly of choice
Instructions
- Cream butter, egg yolks and sugar. Mix in flour.
- Scoop about a tablespoon of dough, press hole in the center, and fill with jelly.
- Bake at 350 degrees for 10-12 minutes.
Chocolate Crinkles
Yields 5-6 dozen.
Ingredients
½ pound margarine
2 quarts sugar
2 cups oil
1 quart eggs
2 tablespoons vanilla
2 ¼ quarts flour
2 ½ tablespoons baking powder
3 cups cocoa
10X sugar (confectioners sugar)
Instructions
- In a medium bowl mix margarine and sugar. Add oil, eggs and vanilla.
- Combine flour, baking powder and cocoa in a separate bowl, then add to liquid mixture.
- Cover dough, and chill for at least 4 hours.
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper.
- Roll dough into one-inch balls. Coat each ball in 10X sugar before placing onto prepared cookie sheets.
- Bake in preheated oven for 10 to 12 minutes.
Scotch Lace Cookies
Yields 10-15 dozen
Ingredients
1 1/2 pounds brown sugar
½ pound butter
1 ½ cups molasses
¾ pounds coconut
1 ½ teaspoons vanilla
1.13 pounds flour
Instructions
- Cream butter, sugar, and vanilla. Add molasses and coconut. Mix in flour till combined.
- On a parchment lined cookie sheet, scoop about a teaspoon of dough and place 6 cookies to one baking sheet. (Leave plenty of room, as the cookies will spread out while they bake.)
- Bake at 350 degrees for 8-10 minutes or until cookies are dark golden brown.
