As the last warm summer evenings grace us in early September, a refreshing Aperol Spritz can serve as the perfect complement to your final al fresco dinners. Dubbed “the trendiest drink in Europe” by Trattoria Piatto owner Ross Morris, the Aperol Spritz is comprised of prosecco, club soda and Aperol—a bitter citrus-flavored liqueur made with over 30 herbs and roots. Because of the low alcohol content of this drink (similar to a glass of wine), the Aperol Spritz is what Morris refers to as a “long cocktail”—a libation that can be slowly sipped over the hours before dinner. Lovely when paired with tapas, or a light appetizer like Caprese salad, this crisp, simple cocktail is a great precursor to heartier Italian fare.
