These days many of us are trying to minimize our trips to the grocery store. With that in mind--during the next few weeks, I’ll be sharing some of my favorite recipes from ingredients that you can keep in your pantry/freezer (I’m willing to bet that you already have some of these on hand). I hope that these recipes help keep you inspired and creative in the kitchen. Stay safe, friends.
This week- let’s talk oats! We have been loving oats lately (old fashioned oats, specifically). I’ve started making homemade greek yogurt (tutorial coming to my blog soon), and I make homemade granola quite frequently. We’ve also used oats to make homemade black bean burgers, and of course- oatmeal. Other ideas for oats? Baked oatmeal, overnight oats, cookies, homemade oat milk- the possibilities are endless! Here are a few great oat recipes to get you started.
Granola
As I mentioned above, we have been making tons of granola lately. One of the things I love about granola is that it is so easy and once you get the hang of it, you can throw it together quickly without using a recipe. My basic formula for granola is as follows: Mix together old fashioned oats, some kind of chopped nuts, a sweetener (lately we’ve been liking date sugar and maple syrup), a fat (we usually use coconut butter or ghee), shredded coconut, and any other add-ins you like (we usually sprinkle on some ground flaxseeds and chia seeds + dairy-free chocolate chips). Bake at 250 for 50 minutes to an hour, stirring occasionally. Let cool- and voila you’ve got granola!

Black Bean Burgers
Oats can be used for savory dishes too! My husband made a version of the recipe below recently, and it was delicious (perhaps especially so since I got a night off from cooking).

I feel like there was a time a few summers ago where everyone was obsessed with overnight oats. And I get it. Overnight oats are easy, delicious, and the perfect make-ahead breakfast.
