These days many of us are trying to minimize our trips to the grocery store. With that in mind--during the next few weeks, I’ll be sharing some of my favorite recipes from ingredients that you can keep in your pantry/fridge (I’m willing to bet that you already have some of these on hand). Got rice? I do! Rice is one my favorite gluten-free grains. It’s delicious, versatile, and lasts for a long time in the pantry.
But, plain rice can get boring. Here are three of my favorite rice recipes.
Baked Rice Risotto
I love risotto. I think it’s one of the first things I made my husband when we were dating. But these days, I just don’t have the time or capacity to stand over the stove stirring and stirring and stirrrrring. (Also, let’s be honest… the only date that we’re having these days is meeting up to watch netflix in the living room after the kids are in bed.)
Enter baked rice risotto. This is such an easy and versatile recipe. You can make it with just about any kind of rice. Plus, it’s incredibly hands-off and you can add in whatever veggies or protein that you have.

Instant Pot Coconut Rice

Fried Rice
Fried rice has been a favorite of mine for years. And it’s a great way to use up leftover rice, veggies, and protein. Here’s a great formula for how to make fried rice with what you have on hand. Since I try to avoid soy- I like to mix mine up with coconut aminos, fish sauce, and sesame oil.
