These days many of us are trying to minimize our trips to the grocery store. With that in mind--during the next few weeks, I’ll be sharing some of my favorite recipes from ingredients that you can keep in your pantry/freezer (I’m willing to bet that you already have some of these on hand). I hope that these recipes help keep you inspired and creative in the kitchen. Stay safe, friends.
Last week I shared recipes using rice. This week- let’s talk about my favorite riced vegetable and a freezer staple in my house- frozen cauliflower rice! Why do I love frozen cauliflower rice? It has a mild flavor, can be used in a variety of dishes, and is an easy way to get my kids to eat veggies.
Ready to cook? Here are 3 of my favorite cauliflower rice recipes.
Mexican Cauliflower Rice is super simple, packed with flavor, and Whole 30 Compliant. And by super simple, I mean that this recipe utilizes just about every time saver possible so that you can whip it up while dealing with two cranky kiddos....or maybe that's just me. Regardless, it's delicious. But, fair warning- it's got some kick to it!
Cilantro Lime Cauliflower Rice is a great way to jazz up regular cauliflower rice. I love to use this for burrito bowls or as a side when we’re eating tacos.
Creamy Mashed Cauliflower is a favorite in my house. My kids love it… may or may not think it’s mashed potatoes. It’s also Whole 30, Paleo, Keto, and can easily be adapted to be vegan.
