Beat the heat with delicious frozen sweets and slushies! These recipes require a little bit of advance prep, but I’m confident they’re worth it....especially when you enjoy them after a day of fun in the sun! Even better? They’re all made with only a few simple ingredients and are healthier than most traditional frozen desserts. Break out your blenders and let’s get ready to whip up some cool treats.
Greek Yogurt Pops
Makes 6 popsicles
Ingredients
2 cups plain whole milk Greek yogurt
¼ cup maple syrup
¼ cup mini chocolate chips
Instructions
1. Combine ingredients and pour into popsicle molds.
2. Freeze overnight and enjoy!
Chocolate Banana “Nice Cream”
Serves 2-4
Ingredients
4 frozen bananas (I recommend peeling, slicing, and freezing them overnight or even a few days in advance. You can also freeze the bananas whole and peel them under cold running water.)
¼ cup cocoa powder
2 tbsp. maple syrup
1 tsp. vanilla
2 tbsp. milk (almond milk is my go-to)
Instructions
1. Combine ingredients in a blender and blend until smooth.
I like to serve and eat this right away for a soft-serve type consistency, but you can also pop your mixture back into the freezer for a firmer treat. I find that an hour in the freezer will make it firm, but not icy.
Rosemary Lemonade Slushies
Serves 2
Ingredients
3 cups lemonade, separated
2 sprigs fresh rosemary (more for optional garnish)
¼ cup honey
½ cup water
Instructions
1. Freeze 2 cups of lemonade in ice cube trays overnight.
2. Combine ¼ cup honey, ½ cup water, and 2 sprigs fresh rosemary in a saucepan. Bring to a boil, stirring occasionally until well combined. Remove from heat and let sit for 30 minutes. Carefully strain to remove rosemary and let cool. Store in your refrigerator until you’re ready to use.
3. Blend together frozen lemonade ice cubes, 1 cup of lemonade, and 3 tbsp. rosemary simple syrup. Store remaining rosemary simple syrup for 1-2 weeks in the refrigerator for future use.
4. Garnish with a rosemary sprig if desired, and enjoy immediately.
Watermelon Lime Slushies
Serves 4
Ingredients
1 mini seedless watermelon, cut into small pieces and frozen on a baking sheet for 1 hour
1 or 2 limes
Instructions
1. Blend frozen watermelon and freshly squeezed lime to taste and serve immediately.
