Cannoli Baked Oatmeal Muffins
Yield: 6-8 servings
2 Tbsp. coconut oil, melted
½ c. yogurt or applesauce
¼ c. brown sugar
2 Tbsp. maple syrup
2 eggs
1 tsp. vanilla
1 Tbsp. orange juice
¼ tsp. cinnamon
½ tsp. baking powder
¼ tsp. salt
½ c. flour (I used oat flour)
1 c. milk (can use dairy free)
2 c. old-fashioned or rolled oats
¼ c. mini chocolate chips
TOPPING
8 oz. ricotta cheese
2 oz. light cream cheese, softened
1 tsp. vanilla
1/8 tsp. cinnamon
2 tsp. orange juice
½ c. powdered sugar
1 c. organic whipped topping
¼ c. mini chocolate chips
1. Preheat the oven to 350 degrees.
2. In a large mixing bowl, whisk coconut oil, yogurt/applesauce, brown sugar, maple syrup, eggs, vanilla, orange juice, cinnamon, baking powder, salt, and flour. Carefully whisk in the milk.
3. Stir in the oats and mini chocolate chips.
4. Next, pour into a greased 9x13 baking dish or 12 lined muffin cups and bake for 30-35 minutes.
5. In a large mixing bowl, beat the ricotta and cream cheese until smooth.
6. Then, beat in the vanilla, cinnamon, orange juice, and powdered sugar.
7. Fold in the whipped topping.
8. Pipe or spread over the cooled oatmeal and sprinkle with mini chocolate chips.
Store leftovers in the fridge.
Mini Chicken & Waffles
Yield: 6 servings
2 lbs. chicken
Salt and pepper
½ c. oat flour
½ c. corn meal (or more flour)
¼ c. Parmesan cheese
1 tsp. oregano
1-2 tsp. onion powder
1 c. buttermilk
Coconut or olive oil
WAFFLES
2 c. milk
2 eggs
2 Tbsp. butter, melted
2 ½ c. gluten free flour
(I used oat, almond, and tapioca)
2 tsp. baking powder
SWEET & SPICY GLAZE
3 Tbsp. maple syrup
½ c. orange marmalade
3 Tbsp. orange juice
1 tsp. Sriracha
FOR THE CHICKEN:
1. Season chicken with salt and pepper and cut each tender into about 3 pieces.
2. In a shallow bowl, whisk the oat flour, corn meal, Parmesan cheese, oregano, and onion powder.
3. Pour the buttermilk into a second shallow bowl.
4. Lightly coat the chicken pieces with the flour mixture, then buttermilk, then back into the flour mixture.
5. Heat a large skillet over medium heat with about 2-3 Tbsp. of oil.
6. Lightly fry on each side until browned, about 3-5 minutes per side. Add more oil to the skillet before browning the second batch.
FOR THE WAFFLES:
1. In a medium mixing bowl, whisk the milk, eggs, butter, flour, and baking powder.
2. Heat a waffle iron according to the directions and spray with non-stick spray.
3. Pour batter and cook until browned (around 3-4 minutes).
4. To create four mini waffles, I poured ¼ cup of batter directly into the center of the waffle iron. You could also make and cut full-size waffles.
FOR THE SWEET & SPICY GLAZE:
1. In a small bowl, whisk the maple syrup, orange marmalade, orange juice, and Sriracha.
2. Spoon over chicken & waffles.
Cacio e Pepe Spaghetti Squash
Yield: 2-4 servings
1 medium spaghetti squash (a little over 3 lbs.)
Olive oil
Salt and pepper
2 Tbsp. butter
3 Tbsp. cream
2 Tbsp. milk or water
1 c. Pecorino Romano cheese, grated
More pepper & grated cheese
1. Preheat the oven to 375 degrees.
2. Pierce the spaghetti squash with a fork, and bake for about 10 minutes.
3. Allow squash to cool. Meanwhile, increase the oven temperature to 400 degrees.
4. Next, cut squash in half lengthwise, and carefully scoop out the seeds.
5. Brush the inside of each half with about 1 tsp. of olive oil, and season with pepper.
6. Place cut side down on a baking sheet. Then, return to the oven for 25-35 minutes, depending upon size. Squash is ready when you can easily pierce all the way to the skin.
7. Once cooled, use a fork to scrape out the flesh in long strands.
8. In a medium skillet, melt the butter over low heat.
9. Next, whisk in the cream, milk/water, and cheese. Continue to whisk until smooth. Then, stir in the spaghetti squash.
10. Finally, season with a little salt, lots of pepper, and additional grated cheese.
