The ForknSpoon Café breakfast waffle is not your traditional sugar-laced treat. True, the recipe starts with a sweet Belgian waffle batter base, but to that chef and owner Jennifer Thompson adds cheddar cheese and a house blend of eight herbs and spices, which she refers to as her “secret ingredient.” The savory mixture is piped on a waffle iron and baked into a delightfully flavorful, golden waffle. It doesn’t stop there.
The warm waffle is topped with a layer of cheddar, black forest ham, two eggs over medium, pecan wood-smoked bacon (which has a richer and slightly nuttier flavor than the more common apple wood-smoked variety) and garnished with fresh Parmesan cheese, olive oil and a sprinkling of herbs.
The result is a complex yet comforting dish of breakfast flavors that is becoming somewhat of a cult favorite in the downtown Lancaster community; staff say it even has its own hashtag, #breakfastwaffle. If you’re still craving a touch of sugar on your Saturday morning, drizzle it with pure maple syrup for a savory-sweet spin.
