Milkshakes have taken on a whole new look partly inspired by Instagram’s obsession with Black Tap in NYC and bloggers who create whimsy of the stuff dreams are made of. Unicorn milkshakes may be so last month to trendsetters, but they’re still oh-so-magical. Mermaid ice cream is the next big thing (just Google images or look on Insta). And chances are if you have kids running around high on the sugar from these things (it is summer after all, so who cares, right?) then you’re gonna need the boozy coconut lime milkshake for yourself.
Depending on the size of glass you use for all of these recipes, you can use the ratio of about 3 scoops of ice cream to a splash of milk.
Coconut Lime Cocktail Shake
Makes 1
Ingredients:
1 ½ cups coconut ice cream (we used Jim Mack’s, made locally)
½ cup frozen and slightly thawed or fresh pineapple
Splash of milk
Shot of coconut rum
Graham cracker crumbs
Zest of lime
Directions:
1. Blend ice cream with milk and rum.
2. Fill glass and top with graham cracker crumbs and lime zest (try adding toasted coconut too).
Unicorn Milkshake
Makes 1
Ingredients:
Sugar ice cream cone
White chocolate melting wafers
Icing
Sprinkles galore (we used rainbow and gold)
Approx. 1 ½ cups vanilla ice cream
Approx. ½ cup milk
Wafer cookies
Maraschino cherries and/or nonpareils
Rainbow gummy candy (ordered online, made by Airheads)
Directions:
1. Prep unicorn horn by coating cone with melted white chocolate wafers and rolling in your choice of sprinkles. Set aside to cool and harden.
2. Ice rim of glass with white frosting and sprinkle on rainbow jimmies.
3. Fill with milkshake (blended ice cream and milk).
4. Break one wafer in half and place as “ears.”
5. Add unicorn “horn” and two cherries or nonpareils for eyes.
6. Top with a rainbow gummy candy or other whimsical candies like swirled marshmallows or rock candy sticks—and, of course, a cute straw.
Mermaid Milkshake
Makes 1
Ingredients:
Pink icing
Gold sprinkles
Melting chocolates (microwaved and molded into seashells) *We found the chocolates and molds at Michael’s
Approx. 1 ½ cups mint chocolate chip ice cream (pistachio works for green coloring, or use another color/flavor altogether)
Approx. ½ cup milk
Mini donuts (we used white powdered)
Straw (from Michael’s)
Drink umbrella (available at Dollar Tree)
Gummy shark (find in bulk candy at family-owned local grocers)
Directions:
1. Frost the rim of a pint glass with pink icing and sprinkle with gold sprinkles. Add 2 mermaid seashells.
2. Blend ice cream and milk. Fill glass with milkshake.
3. Top with additional seashells, a donut “life preserver” and a drink umbrella. Don’t forget the gummy shark!
