It’s safe to say that Victor’s is anything but your ordinary Italian restaurant. This York-based eatery, which operates out of a defunct church from the late 1800s, prides itself on offering a rotating menu of complex yet approachable dishes that just might change your perception of the European fare. Take, for example, this sweet potato gnocchi that will be available through the fall. To create the base of the dish, executive chef George Sheffer crafts doughy delights from a mixture including locally sourced sweet potatoes from Miller’s Plant Farm.
After the gnocchi have been formed, he sautés Swiss chard (from another nearby micro-farmer) and roasted red peppers, then gives plump sea scallops a golden-brown sear in the same pan to meld the flavors. While the gnocchi is boiling, Sheffer creates a rich brown butter sauce with hazelnuts and sage, then everything is combined along with a bit of diced sweet potato, to form an incredible Mediterranean dish chock full of fall flavors. And, of course, don’t forget to pair this great eat with an appropriate beverage; Sheffer recommends one of their choice white wines or a selection from their cleverly-named “Beer Bible,” featuring over 100 tap, cask, canned or bottled beers.
